Directions
Ingredients:
- 2 (6-8 oz) filet mignon steaks (at least 1.5 inches thick)
- 2 tbsp avocado oil (or another high-smoke-point oil like grapeseed or vegetable oil)
- 2 cloves garlic, smashed
- 2 sprigs fresh rosemary or thyme
- Kosher salt and freshly ground black pepper
Instructions:
1. Preparing the Filet Mignon:
- Bring to Room Temperature – Let the steaks sit out for 30-45 minutes before cooking to ensure even cooking.
- Pat Dry – Use a paper towel to remove excess moisture, which helps create a perfect sear.
- Season Generously – Coat both sides of the steaks with kosher salt and freshly ground black pepper. Let it sit for a few minutes to allow the seasoning to penetrate.
2. Searing the Filet Mignon:
- Preheat the Oven – Set your oven to 400°F (200°C).
- Heat a Cast Iron Skillet – Place a cast iron skillet over medium-high heat for 2-3 minutes until very hot. Add avocado oil and heat until shimmering.
- Sear the Steaks – Place the steaks in the pan and do not move them for 2-3 minutes. This creates a flavorful crust.
- Flip and Add Aromatics – Turn the steaks over, add garlic and fresh rosemary/thyme, and let them sear for another 2-3 minutes.
3. Roasting the Filet Mignon:
- Transfer the skillet to the oven and cook until the internal temperature reaches your desired doneness (use a meat thermometer):
- Rare: 120°F (49°C), about 4-5 minutes
- Medium-Rare: 125°F (52°C), about 5-6 minutes
- Medium: 135°F (57°C), about 7-8 minutes
- Medium-Well: 145°F (63°C), about 9-10 minutes
4. Resting and Serving:
- Remove the steaks from the oven and place them on a plate.
- Tent loosely with foil and let them rest for 5-10 minutes—this locks in the juices.
- Serve with your favorite dairy-free sides like roasted vegetables, a fresh salad, or a dairy-free chimichurri sauce.
Flavor Enhancements:
🔥 Garlic Olive Oil Drizzle – Mix minced garlic with olive oil and drizzle over the steak before serving.
🔥 Chimichurri Sauce – A simple mix of chopped parsley, garlic, olive oil, red wine vinegar, and chili flakes.
🔥 Spicy Dry Rub – Add smoked paprika, cayenne, and crushed black pepper for extra flavor.
